Hot German Potato Salad

  • 1 1/2 lbs. potatoes (6 med. size)
  • 8 slices bacon, diced
  • 2 medium onions, diced
  • 3/4 cup chicken broth or bouillon
  • 3/4 cup Bernsteins' Italian dressing
  • 1/4 teaspoon pepper
  • 1 teaspoon sugar
  • 1 egg yolk, beaten

Boil potatoes in their skins and cool. Peel, cut into 1/4 inch slices and place in a shallow dish. Saute bacon until crisp and pour off all but 2 tablespoons of fat. Add onion and saute until transparent, about 3-5 minutes. Add broth, dressing, pepper and sugar, stirring until heated. Remove from heat and stir in egg yolk. Pour hot dressing over potatoes and serve with parsley garnish. Serves 4 to 6.
