Broiled Scampi

  • 2 lbs. large fresh shrimp, peeled, deveined
  • 1 cup Bernsteins' Italian Dressing
  • 3 tablespoons parsley, chopped

Marinate shrimp in Italian Dressing at least one hour at room temperature. Drain marinade into a sauce pan and heat for table use. Place shrimp on broiling pan and broil under high heat about 5 minutes per side, or until "just cooked" - depending on size. Serve immediately with parsely garnish and additional sauce, if desired. Serves 4-6. Note: Broiled Scampi makes an excellent hot appetizer and may be kept warm in a chafing dish using water jacket for buffet service. Pour warmed sauce over shrimp in chafing for buffet entree.
