Salmon Nicoise

  • 4 cups new potatoes, cooked and diced
  • 1/2 cup chopped celery
  • 1 cup cooked salmon (or 1 small can)
  • 1/4 cup chopped white onion,cut in half & sliced
  • 1 1/2 cups cooked green beans, cut in 3
  • 1 tomatoe, cut into wedges
  • 2 hard-cooked eggs, cut in halves
  • 1 cup Bernstein's Italian Dressing
  • 1 teaspoon Dijon mustard

After cooking, marinate warm potatoes in 1/4 cup dressing. Mix in celery. Arrange marinated potatoes and celery, green beans, salmon and white onion slices on shallow serving dish. Garnish with tomato wedges and hard-cooked egg halves. Top with the rest of the dressing mixed with the Dijon mustard, and serve. Serves 4.
